Busy Weeknight Dinner: Tortilla Lime Tilapia Tacos

Dance, baseball, violin, voice lessons and any number of extracurricular events and meetings that come up, make for very busy week nights.  My son has more personality than his little body can contain…so I’m about to become a theatre “momager” and force him to audition for plays.  Ha!  So pile potential play practices on top of that list of activities!  My Children’s Taxi Service route just got a little longer! 🙂

I adore very complicated and time-consuming recipes and always will.  But these days I’m seeing a need for a series of quick and easy meal ideas.  I discovered something new and delicious at Sam’s Club last week and have created two full meals with it.  This Tortilla Lime Tilapia is in the frozen fish section of the store and is very tasty!  Just throw it in the oven for 15-20 minutes and you have your fast and easy protein for a Southwestern flavored dinner.

Tortilla Lime Tilapia Tacos

Ingredients:
(serves 4 people)

4 filets of Tortilla Lime Tilapia
4 flour tortillas
2 cups coleslaw mix
1 cup spinach leaves
1/2 cup Brianna’s Cilantro Lime Dressing
bricilime
pumpkin seeds for topping
shredded cheddar for topping

Method:

Cook tilapia by the instructions on the bag.  Cook time is around 15 minutes in the oven.

While fish is cooking, combine coleslaw mix with Brianna’s dressing in a bowl.

When fish is ready, assemble the tacos by layering the tortillas with slaw/dressing mixture, fresh spinach leaves, fish, pumpkin seeds and cheese.  You might want to drizzle more of the Brianna’s dressing on top.

Serve and enjoy!  So easy and so good!  It tastes like a foodie-worthy street food you might get in San Francisco or somewhere with an equally inspiring food scene!

Another night, I made it without the tortillas…as kind of a deconstructed taco, if you will. I served the fish with a slaw/cilantro lime dressing/pumpkin seed combination and added carrot sticks for extra nutrients.  It was lovely and so easy!
